Under the Sink Organization - Home Organization

Image
Under the kitchen sink can be quite a tricky area to organize. The pipes and plumping make the space awkward, and typically we want to utilize this area is a real estate because we can use it to store a variety of items. Nearly a year ago, when H and I moved into our small home, I pretty much threw a caddy, a tile, and some other cleaning products under there. Overtime (and a garbage disposal replacement later), we just practically threw stuff down there. It become the "junk cabinet" for cleaning products, in essence.  In order to tackle my unorganized and cluttered under-the-sink area in my kitchen, I purchased some inexpensive items to help me get the space under control and utilize to our advantage.  Here are the steps I took to get the area organized: 1.   Empty out the entire area & clean it!  Its IMPOSSIBLE to clean the area without emptying it out. To do a proper assessment of what you have there, and what needs to be discarded/moved, it i

Fiji Style Bhindi | Okra & Potato Stir Fry | Aloo Bhindi Sabzi

A simple yet delicious stir fry with okra and potatoes. This combination is a personal favorite because growing up, my mom would make either this dish or just simple stir fry okra and wrap "parcels" or roti roll-ups for school lunch. To this day, my mouth waters when I think of this lunch. Of course, back then, I wanted to have sandwiches or other "foreign" foods. Even then, I enjoyed this dish. Whenever, I am feeling nostalgic, I cook up one of the many dishes that reminds me of my mother's cooking. Alas, it never turns out as great as mom's cooking, but it does satisfy my tastebuds to some extent.  The best way to eat this is with hot roti! If you have the time, wrap it up into a roti/chapati as you would a burrito and let it sit for at least 30 minutes. Something magical happens and you will enjoy the BEST burrito of your life. 😉  You can also have this as a side dish with rice and dhal. My nieces, weirdly enough, enjoy this with rice alone. I wil

Eggplant & Chicken Stir Fry in Garlic Sauce

Image
This dish was something I came up with when I had to use up the eggplants in my fridge. I searched for a garlicky eggplant dish, but didn't have most of the ingredients other websites required. I also wanted to add protein to the dish to make it complete... so I created my own. This dish has been inspired by the many wonderful recipes on the internet for Chinese Eggplant Stir Fry! The eggplant is sautéed to perfections giving it a smokey flavor and crispy texture. This dish is very satisfying, both as a side or a main dish served over rice or noodles. You can easily substitute the chicken for tofu, making this dish vegan. Ingredients: 2 cups boneless skinless chicken pieces 3 cups diced eggplants 1/2 cup chopped onion 1 cup diced bell pepper 2 tbsp crushed garlic 1 tsp grated ginger 2 tbsp light soy sauce 2 tsp dark soy sauce 1 tbsp oyster sauce 1 tsp balsamic vinegar 1 tbsp cornstarch 1 tbsp oil Method: -       Cut the eggplants, chicken, bell peppers and
