Aloo Tuna Tarkari Fiji Style | Canned Tuna with Potatoes

 


Ingredients:

  • 2 cans tuna (4.5 oz each)
  • 2 medium potatoes, quartered then sliced thinly
  • 1 tbsp oil
  • 1/3 cup sliced onions
  • 1 tbsp crushed garlic
  • 1 sprig curry leaves
  • chili pepper to taste 
  • 1 tsp turmeric powder
  • 1 tbsp Fiji masala or garam masala
  • 1/2 tsp cumin seeds
  • 1/4 cup tomato puree/sauce or 1/4 cup chopped tomatoes 
  • salt to taste
  • 1/4 cup water
  • Cilantro to garnish
Method:

  1. Add oil to a pan and heat on medium high heat
  2. Add onions and sauté until golden and slightly browned
  3. Add garlic and cook for 30 seconds
  4. Add chili pepper, sprig of curry leaves, and cumin seeds and sauté for 30 seconds
  5. Add turmeric powder and masala. Sauté for 1 minute
  6. Add tomato sauce/fresh tomatoes and cook until oil separates from the masala blend.
  7. Add potatoes, tuna, and salt to taste. Stir well. 
  8. Add water, cover, and cook for approximately 20 minutes or until potatoes are tender, stirring occasionally. 
  9. Garnish with cilantro and serve hot with roti, rice, or any side of your choice.
